Our local supermarkets have a monthly or quarterly free magazine called “shopping”. This magazine is mostly advertisements of products sold in the supermarkets but it also has tips, recipes, seasonal food, what’s new, flower arrangements, etc.

I found this recipe in one of these magazines – have to finish up our homegrown tomatoes, you know.  🙂

Sorry, the photo isn’t very clear but I hope you got the idea.  🙂

Ingredients:

  • 1 container of cherry tomatoes (abt 250g), halved
  • 2tbsp chopped basil leaves
  • 1 lemon for its juice
  • 6 tbsp olive oil
  • 1tsp garlic, minced
  • salt and pepper
  • airtight container

Mix then all up together and put into a container.

* You can store the tomatoes in a container in the fridge for 2-5 days.

** You can also replace lime or orange juice for lemon juice and coriander for basil.

We had this with several meals (dinner). It goes well with roast pork and potatoes, on ciabatta bread, with steamed rice… and so on. I will keep this recipe and use it regularly for sure.  🙂
