Slow Cooking can be done using the oven or using a slow-cook pot. I own 2 slow cookers; i.e. a Chinese-style Water-based Slow Cooker and a Crockpot.  Schoulder of Pork in Five-Spice, Tamarind & Ginger can be cooked using an oven or a slow cooker. I’ll post both methods.. 🙂

Ingredients:

  • 2 tsp 5-spice powder
  • 1 tsp dried chilli flakes
  • 1 cinnamon stick
  • 2 star anise
  • 60 ml light soy sauce
  • 125 ml Hsiaoxing wine or chinese cooking wine
  • 2 tsp tamarind concentrate
  • 2 tbsp sugarcane sugar or brown sugar
  • 40 g grated ginger
  • 2 chopped garlic cloves
  • 300 ml water
  • 1kg pork shoulder (or lamb shoulder), deboned, cut into large chunks
  • 200 g potatoes, peeled, cut into large chunks
  • 150 g carrots, cut into large chunks
  • 1 medium onions, finely chopped

Preparation if using Oven:

  1. Preheat oven to 180C fan-forced.
  2. Dry-fry 5-spice powder, chilli flakes, cinnamon stick and star anise in a small frying pan, stirring, till fragrant.
  3. Combine spices with light soy sauce, Hsiaoxing wine, tamarind concentrate, sugar, ginger, garlic and water.
  4. Place potatoes, carrots and onions in a deep casserole pot with a lid.
  5. Then put pork on top of vegetables in a single layer and pour or drizzle spice mixture all over pork.
  6. Put covered cassserole pot in oven for abt 60 mins. Check if pork and vegetables are tender and cooked, otherwise return to oven for another 20 mins.
  7. Serve immediately with steamed white rice.

Preparation if using the Crockpot:

  1. Dry-fry 5-spice powder, chilli flakes, cinnamon stick and star anise in a small frying pan, stirring, till fragrant.
  2. Combine spices with light soy sauce, Hsiaoxing wine, tamarind concentrate, sugar, ginger, garlic and water.
  3. Place potatoes, carrots and onions in the slow cooker pot.
  4. Then put pork on top of vegetables in a single layer and pour or drizzle spice mixture all over pork.
  5. Cover with lid and cook on high for 4 hrs, till pork and vegetables are tender and cooked.
  6. Give it a gentle stir and serve immediately with steamed white rice.
