We harvested some beautiful ripe heirloom tomatoes, i.e. Green Zebra & Black Russian which got made into a lovely refreshing tomato salad using a recipe adapted from Sarah at Martha Stewart’s website..
Ingredients:
4 beef tomatoes, core removed, cut into chunky wedges
1 green jalapeno, seeded & minced (I used 4 homegrown purple chilli padi)
1 lemon, zested & juiced into 1-2 tbsp
2 tbsp peeled & minced fresh ginger

Preparation:
- Put tomatoes into a large bowl.
- Add in all ingredients straight into bowl and stir gently to mix.
- This salad can be prepared earlier and kept in fridge till ready to eat. It’d taste better if let sit to marinate and absorb full flavour of all ingredients.
Dunster and I had the Spiced Heirloom Tomato Salad with hasselback potatoes (from our patch as well) with cheese and piri-piri chicken ala Nando’s.. Very satisfying dinner.. 🙂
